Chocolate Surprise Cake

The ‘surprise’ in this cake is mayonnaise.  Yep, it sounds a bit freakish, but it makes a delicious, moist, chocolate cake.  And thankfully, there’s not a hint of mayonnaise flavour.  A really good, simple recipe.


 250g self-raising flour

50g cocoa powder

½ teaspoon baking powder

200g sugar

150ml cold water

2 teaspoons of vanilla extract

200g good quality mayonnaise

1 medium free range egg


Preheat oven to 180C / 350F / Gas Mark 4, and butter/line a 24cm / 9 inch spring-form cake tin.

Sift the flour, cocoa powder and baking powder into a large bowl, and stir in the sugar.  Add the water, mayonnaise and egg, and stir well.

Spoon into the prepared tin and bake for 30-40 minutes, or until a skewer inserted in the middle comes out clean.

Cool on a wire rack for 15 minutes, and then remove the sides of the tin.
