Refreshing, zesty and with a small kick of chilli for good measure, this is a nice handy recipe, ideal for creating a midday wrap, to use as a dip with tortilla chips, or as part of a salad.
Give it a go, and zest up your taste buds!
1 small red onion – finely sliced
1 mango – peeled and the flesh finely chopped
2 medium sized tomatoes – de-seeded and finely chopped
1 chilli – de-seeded and very finely chopped
Juice of 1 lime
1 level teaspoon of caster sugar
Approx. 1/2 teaspoon of sea salt
Approx. 1/2 teaspoon of freshly ground black pepper
Handful of fresh coriander
Put all the prepared ingredients in bowl.
Mix well, and set aside for 30 minutes to allow the flavours to marinate. Give another stir to make sure the lime juice etc. coats the salsa well.
Taste, and if necessary add seasoning, a little more sugar or lime juice etc. as required.
Serving suggestion; I served the salsa in tortilla wraps, with some more coriander, soured cream and Quorn chunks (that had been fried gently until browned), for a great midday snack.
